Azienda Vitivinicola Tola Girolamo Sas di Tola Domiziana


The winery extends in the north-western part of Sicily, in the province of Palermo, between the town of Alcamo, the small village of Grisì and the village of Partinico.
Born from the passion and intuition of Girolamo Tola called "Mimmo", who inherited the love for the land and, especially for viticulture by his father Francesco.
For his family the land was sustenance, life, but also enthusiasm, satisfaction and pride.

Tola wines are produced with respect for nature, from entirely farm vines that, essentially in the first person, and after with the help of a team of experts, Mimmo care.
He always says that "wine is made in the vineyard", it is from there that everything starts and that is why he cares about the plant since its birth.
The vineyards of the Tola Winery are located in the estate of Bosco Falconeria, at an altitude of about 400 meters. Slm. in one of the most prestigious terroir of Sicily.
From there it dominates the entire gulf of Castellammare del Golfo, where the plains beaten by the warm winds of sirocco and the mild sea breeze give way to the gentle and sunny hills.
The cultivation is espalier, simple guyot with a density of 4600 plants per hectare, a sixth of plant of 240 x 90 cm., and an average production of about 2 kg. per plant.

Tola wines come from highly selected grapes, native varieties such as: Nero d'Avola, Syrah, Grillo, Catarratto, Insolia and allochthonous varieties such as: Chardonnay, Merlot, Pinot Noir.
Each wine claims its own individuality, tells its own story and paternity of the vine, and has distinct distinctive characteristics according to the Sicilian wine tradition.
The innovative strategies, the attention to new techniques and technologies in the vineyard and in the cellar, the aging and conservation in French oak barrels, characterize the quality process, giving life to characteristic and innovative wines, that enhance the exotic scents of the land of Sicily.

For all this, the Tola Winery has used the recognition of very important prizes obtained in the most prestigious Italian and world competitions.
The goal is to transmit the sensory experiences that only the taste and aromas of grapes grown and worked with wisdom and dedication are able to generate.

The winery, moreover, has always been committed to obtain greater control in terms of efficiency and timing and a business saving, in terms of lower operating costs, aimed at reducing both the consumption of electricity through the purchase of machinery of the latest generation, low environmental impact and reduced CO2 emissions, is the use of raw materials necessary in the process of processing, processing and storage.

Tola wants to communicate a product closely connected with the territory and the land where it is produced, with the family and the people who produce it, with the sea view and with the historical, cultural and social DNA of its places where the vineyards are cultivated.
